Prawn Marinade

Neil Gordon's world renowned prawn marinade

Ingredients as pictured, quantities to taste
We like lots of garlic and not too heavy on the lemon juice or Soy
Salt with care, or not at all, if Soy is liberally applied

Uncooked "green" prawns should be deveined and the heads removed
Remove the shells but leave the tails intact - looks much better
Prepare the olive oil, sweet chilli, garlic, lemon and soy mix in a bowl
Throw in the prawns after rinsing in cold water and drying with paper towel
Mix well to ensure that all the prawns are liberally coated with the marinade
Leave to stand in the fridge for a couple of hours
Cook in a hot pan or wok for no more than 2-3 minutes
